Driving Rain

See! That's punny! Because that's what we did...drive in the driving rain yesterday. On the interstate. With a million other careening drivers who cared not one whit that they could not see through the rain, nor that their tires were not making purchase with the road.

But, it was worth it.

We were venturing into the depths of the barrio looking for a dodgy little 'ostioneria' which would spell either super yumminess, or instant ecoli.

Luckily it was the former rather than the latter.

I love the barrio!

Where else could you get:

3 ceviche tostadas (pescado, pulpo, camaron)
4 tacos de barbacoa
2 tacos the pollo
1 coctel de ostiones campechana (mediana)
&
4 cervezas

for under 40 bucks?

A thoroughly green grilled dinner!

Grilled Fava Beans:

Simple and yummy; just my kind of food.   This is easy... make it to eat while you grill the fish.  Toss some fava beans (in their pods) with olive oil and sea salt.  Then just throw on the grill until charry and steaming.  Then, just wrestle them out of their pods and eat them whole.  Mmmmm.

Grilled Mahi Mahi with a cilantro salsa verde/salsa cruda/mojo de ajo on spinach.

This was simple as well, I threw together a crude salsa out of cilantro, garlic, salt, fennel tops, and a bit of orange juice (pulsed in the mini chopper).  We just served this over some simply grilled mahi mahi on a bed of spinach.  Not pictured: the grilled fennel we ate on the side.  Mmmmm....

This meal was prepared due to serendipity, but also as a nod for:

Pressure Cooking Madness

Oh how I do love the pressure cooker. I do I do I do!

I've made lots of things in it, but here is one particularly successful and yummy dish:

Golden Rice

1 c long grain rice (or basmati)
1. 5 c broth (I used veggie)
1 tsp oil
1 small chopped onion
1-2 grated carrots

Heat oil in pressure cooker and add onion. Cook until translucent and fragrant. Add rice and stir to coat the grains. Carefully add the broth (watch out for sputtering), and grated carrot. Put lid on the cooker and bring to pressure. Once under full pressure, cook for 3 minutes. Remove from heat and allow the pressure cooker to come down naturally for 7 minutes. Quick release any remaining steam at this time. Adjust seasoning (I think I ended up adding a touch of white pepper and sea salt at this point as my veggie broth had no salt).

The original recipe called for stirring in some chopped dill just prior to serving, but I didn't bother. It was wonderful just as is. I think it would be wonderful with dill as well. Or toasted sesame seeds.

This rice dish could quickly become an addiction. I'm already thinking of making the same recipe, but replacing the carrots with beets....oooh pink rice!
