Lazy Girl's Quick Lunch Tabouleh

This is my current lunch time obsession. So simple and so yummy.

Throw some bulgher (cracked wheat) in a microwave safe bowl. Add some water. Zap in microwave for a minute. Drizzle with olive oil and toss to cool. Chop tomato, cucumber, and parsley (lots) and add to (hopefully) now cooled wheat. Add sea salt and the some freshly squeezed lime and toss.

Eat frantically and count down 'til tomorrow lunch time when you will eat it again!

PS. D produced his corned beef this weekend. It was three weeks in prepartion, but super yumminess. He asked if it was blogworthy, and oh! it was. But, I forgot to take a picture.

Friday Night Tea

A hunk ofSt. Andre, dos equis amber (on sale for 4.99/six pack!), wheat crackers, and olives.

I hardly think it gets much better.

D is in the mad throes of food project preparation....he's in pursuit of the perfect smoked brisket. He's already talking some crazy business idea of manufacturing lump charcoal for when we move back to australia. He claims he would not be able to live without lump charcoal again. He's silly.

Other current food projects
D's has got two bits of corned beef curing in the fridge, going on two weeks now....

I've got a big mason jar of preserved limes that I'm going to turn into lime pickle.

D's latest cheddar should be ready next week.

I'll be smoking tofu when D smokes his briske tomorrow and will use the same dry rub and wet mop on the tofu that he uses on the brisket...I'll let you know how that goes.

Meanwhile, we've had some great food discoveries in the past couple weeks:

1. My sister and I discovered the YUMMIEST ceviche shop in the dark heart of the barrio a couple weeks ago. We figured it would either be great or we'd die of ecoli. Luckily, it was more great...and not so ecoli.

2. A local sushi shop has the most beautiful escolar at the moment. I dream of it, it is that good. Oh and flounder!

3. Olive salad! I'm not sure of the brand (maybe boscolli's?), but it is available at my local grocer whenever I have to eat it. Which is often.
